Good News for those with Gluten Intolerance or Celiac Disease

Trader Joe’s now offers wheat-free, gluten-free tortillas!

I think everyone loves shopping at Trader Joe’s.  I know I do, for the music and flowers and oh yes- the food.

Trader Joe’s brand tortillas have a rice base with a few other safe ingredients like tapioca.  Unlike rice products of the past, I found these to be delicious with a pleasant texture.  They have a nice “tooth”: almost a crunch.  I actually liked them better than regular tortillas which sometimes have sticky, gummy mouthfeel.

However, it is harder to roll or fold them without cracking.  I have been using them mostly for quesadillas (only one or no fold, depending on if you use one or two tortillas).

You can also soften them by microwaving under a damp kitchen towel for 10 or 20 seconds.  Use immediately.
