Eating As You Detox! An unbelievably delicious recipe for you.

photoDetox Diet!

Along with thousands of others, I made a few (probably too many) New Year’s resolutions.

I do have to give myself a pat on the back for getting one underway: a 10 day detox.

In case you think that detoxifying means starving or just drinking rutabaga juice,

here is one of the dishes I made for Detox Day 2:

Italian Organic Chicken with Tomatoes

I must say I’ve outdone myself this time! People who happened to stop by noticed the aroma and asked ‘Cooking something fancy? Smells delicious!’ 

Not quite as easy as a frozen dinner thrown in the microwave but close, very close. And SO GOOD!

Ingredients:

  1. 2 organic chicken breasts
  2. 1 can of Organics brand (or other) chopped tomatoes- the ones already seasoned with garlic, oregano and basil.

(Organics is the store brand of Safeway groceries. I am not a spokesperson for either business, but these tomatoes were so outstanding I had to tell you about them. I am sure other brands would be excellent, too!)

  1. Optional (but great!) 1 or 2 cups of large slices or chunks of vegetables such as, broccoli, cauliflower, yellow squash, zucchini, peppers, onions, mushrooms.

Directions

  1. Pre-heat oven to 325 degrees.
  2. Lightly oil a baking dish or covered casserole. Add all ingredients and cover with the canned tomatoes. 
  3. Cover with lid or foil.
  4. Cook 20 to 30 minutes, depending on thickness of chicken. It is done when a meat thermometer inserted into the thickest part registers 165 degrees.

This looks, smells and tastes wonderful!

I added a chopped baby kale salad which I bought from a health food store and a few redskin potatoes for a healthy feast!
